  • 1 lobster tail
  • 1 tbsp butter
  • 2 brioche hot dog buns
  • ¼ cup finely chopped celery
  • ¼ cup finely chopped spring onions
  • 3 sprigs of dill
  • 1 tbsp chopped parsley
  • Salt & pepper
  • ½ lemon
  • 1 tbsp mayo
  • 2 tsp cranberry sauce


  1. Preheat oven to 180 degrees
  2. Cut lobster tail shell and split in half. Add salt and spread the butter.
  3. Place lobster in the oven for 12 minutes
  4. Add the hot dog buns to a pan on high heat and brown on each side for 1-2 minutes
  5. Meanwhile, finely chop the veg and herbs
  6. Once the lobster is cooked, combine in a bowl with the celery, spring onions, dill, parsley, salt, pepper, lemon, mayo and cranberry sauce
  7. Fill the buns with the lobster mayonnaise mixture and top with extra lemon and dill
