This delicious and healthy meal for 4 comes in a less than $4 per serve.


  • 500g chicken breast
  • 8 rice paper sheets
  • 2 nori sheets
  • 1.5 cups cooked sushi rice
  • 2 carrots (sliced into matchsticks)
  • 1 large cucumber (sliced into matchsticks)
  • 3 tbsp teriyaki sauce
  • 2 tbsp kewpie mayo


  1. Boil the chicken for 15 minutes. Remove from the boiling water and shred
  2. Return the shredded chicken back to a pan on low heat and add the teriyaki sauce. Stir to coat the chicken
  3. Making one large roll: Lay down 4 lightly wet rice paper sheets slightly overlapping (as per video) on a large chopping board or clean bench. Place the nori in the middle and top with half the sushi rice, carrot, cucumber, chicken and kewpie mayo.
  4. Fold inwards to make a large burrito, slice down the middle and enjoy!
